Ok, I have a secret: there’s no cheese in this recipe. I know. I know. It doesn’t matter, though, because pumpkin is everything, and this dish is still comfort food sans cheese. Recipe and image via Ruby Red Apron.
Ingredients:
2 cups dry macaroni
Sauce:
1/2 cup nutritional yeast
1/4 cup flour
2 teaspoons paprika
1 teaspoon salt
2 cloves garlic
2 tablespoons onion (minced)
1 cup almond milk
2 tablespoons oil
1/2 cup pumpkin (pureed or canned)
pinch nutmeg, cinnamon, turmeric
Bread Crumb Topping:
2-4 medium slices bread
oil
parsley, salt
