Ingredients

  • 9-12 full lasagna noodles (precooked or no-boil variety—we buy our packages for $2/each here)
  • 2 cups regular cottage cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan
  • 2 whole eggs
  • 2 cups fresh spinach (cooked and squeezed dry, so really about a full bag of pre-washed spinach leaves before cooking)
  • 1 cup firm tofu (crumbled)
  • 3 cups marinara sauce (opt for a low-sugar variety or a high-protein version for the most powerful recipe—we use this $2 jar)
  • 3 tsp seasonings of choice (we prefer garlic powder, Italian herbs, salt and pepper)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix ricotta, eggs, spinach, tofu, Parmesan cheese and your preferred seasonings.
  • Spread a thin layer of marinara sauce at the bottom of a baking dish.
  • Layer noodles, ricotta mixture, sauce and shredded mozzarella. Repeat until full, finishing with mozzarella on top (feel free to shove a little in your mouth as necessary).
  • Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until golden and bubbly.
  • Let it rest about 10 minutes before serving and then enjoy sprinkled with fresh herbs and additional parmesan cheese.
