Yum Alert: Coconut Mango Rice Pudding

A healthy twist on dessert.

This looks so delicious I can hardly stand it. I’d reckon that it’s a lot less gross for you than a slice of chocolate cake for dessert, or a bag of chips for a snack.  Whip up a big batch, keep it in the fridge, and serve to guests with mangoes & yum sprinkled all over it.

Coconut Mango Rice Pudding

Ingredients:

  • 6 cups water
  • 2 cups Arborio rice
  • Salt
  • 1 1/2 cups plus 2 tablespoons sugar
  • 1 (14.5-ounce) can unsweetened coconut milk (see Notes above)
  • 1 cup heavy cream, chilled
  • 1 teaspoon vanilla extract
  • 2 ripe mangos, peeled and cut into 1/4-inch cubes (see Notes above)
