1 cup walnuts
1 cup almond meal, or finely ground raw almonds
2 cups dried, pitted dates
6 tablespoons raw cacao powder
1 teaspoon pure vanilla extract
1/4 teaspoon sea salt
1/2 cup extra virgin coconut oil, at room temperature
1/4 cup pure maple syrup
2 tablespoons raw cacao powder
Put the walnuts in a food processor and blend until in smaller pieces. Add the almond meal, dates, 6 tablespoons of cacao, vanilla, and salt. Blend until crumbly. The mixture should stick together between your fingers a little. Don’t overmix, as it will release the oils from the nuts. You can add a few drops of water if it isn’t sticking together at all.
When ready, press the mixture into an 8×8 brownie pan. Use a spatula to press it in and smooth it out evenly.
In a bowl, add the coconut oil, maple syrup and 2 tablespoons cacao powder. Whisk with a fork until it is mixed. Pour the chocolate over the brownie, again using a spatula to even it out. Refrigerate for an hour before serving. Can also be stored in the freezer.
