Stray from the conventional cake, brownie, or s’more and give them a creative and cool summer treat – Cracker Barrel Cheddar Ice Cream. Ingredients:
½ cup diced strawberries
½ cup blueberries
1 tsp. fresh lemon juice
1 Tbsp. sugar
4 oz. (1/2 of an 8 oz. pkg.) CRACKER BARREL Vermont Sharp-White Cheddar Cheese
1-1/2 cups vanilla ice cream
10 sugar cones
Make It:
MIX the first four ingredients together in a small bowl. Cover and refrigerate for at least 30 minutes.
BREAK each of the ice cream cones in half, lengthwise. Reserve any crumbs for another use. Arrange all items on a serving platter.
Serving Suggestion:
To prepare as bite sized treats, use a tablespoon measure to pre scoop the ice cream onto the sugar cone pieces. Place them on a plate or baking sheet and put them in the freezer until ready to serve. Finish by adding slices of cheese and berries.
Special Extra:
Any leftover sugar crumbs should can be saved and used as a topping for ice cream sundaes.
