Last week it was Spring, this week it’s Winter? I’m confused. The weather has been ridiculous in New York City. I am freezing my butt off but it looks and sounds like it’s Spring so it’s very confusing.
In the morning I need something warm, delicious, and healthy to get me going. That’s where this Pumpkin Pie Oatmeal comes into play, maybe it will be a little too filling for breakfast but it will make an awesome dessert.

Ingredients:
- 1/3 cup regular oats
- 1 cup almond milk
- 1/2 tsp pure vanilla extract
- 1/3-1/2 cup pumpkin
- 1/2 tbsp chia seeds
- Pinch of sea salt
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/8th tsp nutmeg
- Chopped pecans (approx 1 tbsp)
- 1 tbsp almond milk
- 1 tbsp pure maple syrup
- 1/2 tsp Earth Balance
- Pinch of cinnamon
- 1/3 of Pumpkin Butter Oat Square, crumbled
