Umami Noodles with Stir-Fried Beef Recipe

Ingredients

  • 12 ounces ramen or udon noodles (these are cheap and easy to keep in the pantry)
  • 3 tbsp sesame oil (divided into 2 tbsp + 1 tbsp, this is the sesame oil we keep on-hand at my house, which is great on everything from sushi rice to salads)
  • 1 pound high-quality beef, thinly sliced and preferably either flank steak or ribeye cuts (if you’re preparing a kosher version of this meal, please use kosher-certified meat)
  • 2 tbsp potato starch or cornstarch
  • 2 tbsp avocado oil or another neutral oil
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 cup scallions (sliced into 2-inch pieces)
  • 1/3 cup red onion (sliced very thin)
  • 1 cup sliced fresh mushrooms (shiitake or button are the best varieties to use here)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sweet mirin wine (or substitute with 1 tbsp honey + 1 tbsp water)
  • 1 tbsp rice vinegar
  • 3 whole fresh garlic cloves minced finely
  • 1 tsp freshly grated ginger (or very finely chopped)
  • 1 tsp chili flakes
  • 1 tbsp brown sugar or maple syrup

Instructions

  • Cook the noodles according to package instructions. Drain and toss with 2 tablespoons of sesame oil to prevent sticking. Set aside.
  • Toss the beef slices with potato starch, salt, and pepper. Let it sit for 10 minutes while you prep the vegetables.
  • In a small bowl, mix the soy sauce, mirin, rice vinegar, extra 1 tbsp of sesame oil, garlic, ginger, chili flakes (if using) and brown sugar. Whisk until well combined. Set aside.
  • Heat 1 tablespoon of oil in a large frying pan or wok. When it’s hot, toss your thinly-sliced beef in, cooking until browned on all sides.
  • Toss your noodles in to mix with the beef and the little bits of beef in the pan.
  • Turn the heat off, add your umami sauce. Serve immediately.
