Your Chicken Noodle Soup Alternative

A flavorful way to kick that cold to the curb.

When you’re coughing & sneezing – sometimes the thought of chicken noodle soup bring back nauseating feelings of sick days of yore. While, for most, it works – why not spice it up a little… I mean, wouldn’t you rather if Chicken Curry could cure a cold? (say THAT 5 times fast). With filling coconut milk, chicken, ginger to ease nausea and a Thai twist – you’ll be feeling like a million bucks with every sip.

Chicken and Coconut Thai Curry Soup Recipe:

You will need:

  • 2 teaspoons of vegetable oil
  • 1 tablespoon of Thai red curry paste
  • 4 cups of chicken stock
  • 1 14 oz can of coconut milk
  • 1 piece of ginger, peeled, about 2 inches
  • 2 pieces of boneless, skinless chicken meat of your choice: breasts or thighs
  • 1 tablespoon of fish sauce
  • Chopped vegetables such as carrots, broccoli and celery (see notes)
  • 1 small bunch of Thai basil leaves (see notes)

Cut the chicken meat into cubes of about 1 inch in size.

Heat oil in a large pot over medium-high heat. Add the curry paste and cook quickly for about 30 seconds without burning it. Add the stock, coconut milk and ginger and bring it to a boil. Add the chicken, cover and reduce heat to medium-low. Cook until chicken is cooked through, about 15 minutes. Add fish sauce and vegetables. Turn heat up and cook until vegetables are just cooked but still crunchy, about 5 minutes.  Stir in basil leaves and pour into bowls. Serve with rice.
