I love Saturday mornings — and Saturday morning breakfasts. This apple pie baked oatmeal feels all the decadent for a weekend indulgence, yet is made from healthy, wholesome ingredients and suitable for those following a gluten-free and/or vegan diet. Image and recipe via One Ingredient Chef.

Ingredients:

Makes 2 servings

  • 1 1/2 cup rolled oats
  • 1 cup non-dairy milk
  • 1 cup water (approx.)
  • 1/4 cup finely chopped nuts (pecans, walnuts, or macadamias)
  • 1 tablespoon vanilla
  • Dash Stevia or other sweetener
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 Granny Smith apple
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
