I’ll admit that I’m not a tremendous Avocado fan. I enjoy the odd chip dipped in to guac, but you’ll never find me ordering avocado atop my salad. With that said, in the same sense that my tastes lean more toward guacamole, if you mix an avocaod with a potato and make it spicy… and I’m game. Try this to add some healthy fats to your next potato side dish.
Avocado Whipped Potatoes w/ Caramelized Onions
- 2 lbs Yukon gold potatoes (quartered if large)
- 1 small yellow onion (sliced)
- 3 tbsp butter
- 3 tbsp low-fat sour cream
- 4 cloves garlic (minced)
- 1/2 tbsp Sriracha sauce
- 1 tbsp black pepper
- 1 1/2 tsp salt
- 1-2 avocados
