I’ll admit… this didn’t sound half as tasty as it actually is, at first. The thought of jalapenos & bacon anywhere near a margarita, in fact, made me want to vom at the thought. But the recipe is quick, easy & tasty. Completely reasonable for accompanying a burger at your next BBQ.
Bacon Pineapple Jalapeno Margarita
Recipe adapted from TheFoodInMyBeard.com
Ingredients/Tools:
- Crispy cooked bacon (4-5 slices)
- 3 tablespoons of table salt
- 1 whole, ripe, pineapple, peeled & cored
- 2 jalapenos, with NO seeds (very important. those seeds will ruin everything.)
- Tequila (Jose Cuervo worked really well for me!)
- Cocktail shaker with strainer
- Cheese cloth
- Food processor
Directions:
- Mix the bacon & table salt in to the food processor & pulse a couple of time, until the bacon is about ALMOST at the consistency of the table salt.
- Juice the peeled pineapple & 2 seeded jalapenos in the food processor.
- Strain through cheese cloth (for the most juice)
- Add, to a shaker, the juice of 1 lime (roll the lime on the counter to get the juices flowin’), 1 shot of tequila and 3/4 cup of the pineapple/jalapeno juice and ice
- Shake forever and ever
- Rim the margarita glass with the juiced lime, and then bacon salt.
- Pour
- Sip
