Tis the season for sweet potato recipes. I’m the one you can find eating the marshmallow topping off the sweet potato casserole at Thanksgiving because I’m not in love with the potatoes themselves. When they come in fry form, however, it’s a different story. Add some parmesan, cilantro, and Sriracha sour cream, and you have sweet potato perfection! Recipe and image via recipefirst.blogspot.com.
Ingredients:
4 sweet potatoes
2 Tablespoons olive oil
1/3-1/2 cup grated Parmesan cheese
A handful of fresh cilantro, roughly chopped
Salt and pepper, optional
For the Sriracha sour cream dip:
1 cup reduced fat sour cream
2 Tablespoon Sriracha sauce or to taste
