Yum Alert: Cauliflower Au Gratin

I’m going out on a limb and saying that cauliflower is this year’s brussels sprouts.

I have a feeling that cauliflower will be the new brussels sprouts. Do you agree?

Ingredients

Cauliflower Au Gratin

2 cups of blanched cauliflower florets

1 oz black truffle (truffle oil works also)

1 cup heavy cream

½ cup shredded cheddar White

2 oz grated parmesan

Salt and pepper

Buttery Bread Crumbs

1 cup panko bread crumbs

4 oz melted butter

Method

Preheat oven to 450 F. In a medium pot, heat cream to boil then add in cauliflower, truffle, cheese and season with salt and pepper. Let cook for 2 minutes and put into an oven-safe serving dish. Mix the melted butter and bread crumbs and cover the top of the cauliflower.  Place in oven for 7 minutes or until crumbs begin to brown.
