Yum Alert: Coffee Cake Cupcakes

Coffee Cake Cupcakes will brighten up your Monday morning, trust me.

It may be Monday tomorrow, but if you make these today for tomorrow’s breakfast, at least you’ll have something to look forward to! Image and recipe via The Shiksa.

Ingredients

STREUSEL INGREDIENTS

1/4 cup brown sugar
1 tsp cinnamon
Pinch of salt
1 cup finely chopped pecans
1 tbsp melted unsalted butter

CUPCAKE INGREDIENTS

2 cups flour
2 tsp baking powder
1/2 tsp salt
1 1/4 cup sugar
1/2 cup unsalted butter, room temperature
2 eggs, room temperature
1 cup sour cream or Greek yogurt, room temperature
1 tsp almond or vanilla extract

GLAZE INGREDIENTS

1 1/2 cups powdered sugar
2 1/2 tbsp milk
1 tsp vanilla
1 tsp melted butter

YOU WILL ALSO NEED

Muffin/cupcake liners or nonstick cooking spray, regular muffin tin (12 muffin capacity), 2 mixing bowls, 1 small mixing bowl, glass, plastic bag, whisk, a small ice cream scoop.
