Gluten-Free Dairy-Free Ice Cream Sandwich
Ingredients:
- Your favorite Gluten-Free Cookie (I like to use Pamela’s Products – Espresso)
- Your favorite Dairy-Free Ice Cream (I love Coconut Bliss Ice Cream)
Directions:
- Scoop 2 tbsp of your favorite dairy-free ice cream on your favorite gluten-free cookie (flat side, up)
- Sandwich another cookie on top, and place on a plate or cookie sheet covered in parchment paper
- Store in freezer for up to 4 hours for mess-free eating and enjoy!
