I’m constantly having Guinness Gasms — but mostly from actual liquidy-good Guinness. I kind of hit a rut in my Guinness Cupcakes hay-day, having consumed more than one human body should handle in a month – but I think I’m ready to get back on the saddle – with a new recipe (here’s the old one. compare & contrast, if you’d like), new mind set, and new stamina to eat tons of these in one sitting. Here goes nothing.

Guinness Gasm

Ingredients:

(For the cupcakes)

  • 1 cup Guinness
  • 1 cup unsalted butter
  • 3/4 cup unsweetened cocoa powder
  • 2 cups all purpose flour
  • 2 cups sugar
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 2 eggs
  • 2/3 cup sour cream

For the filling:

  • 8 ounces bittersweet chocolate
  • 2/3 cup heavy cream
  • 2 tablespoons room-temperature, unsalted butter

(For the frosting)

  • 3 to 4 cups confectioners sugar
  • 1/2 cup room-temperature, unsalted butter
  • 3 to 4 tablespoons Baileys Irish Cream
