Yum Alert: Ice Cream Pizza!

Emack & Bolio’s double scoops us their secret recipe for their famed Rock & Roll “Ice Cream Pizza”

Emack & Bolio’s, a Boston based Ice Cream chain with several location in NY (as well as down the east coast) has concocted a hybrid of guilty pleasures and a “Sundae in a Slice”, a combination of brownie, ice cream, chocolate and psychedelic toppings to create the ultimate summer treat – Ice Cream Pizza.  And if you’re NYC… Emack & Bolio’s sells this pizza in the following locations (the one on West Houston is my favorite post shopping pit stop!)

Brownie Crust Ingredients:

  • 3 tablespoons of butter
  • 3 tablespoons of canola oil
  • ¾ cup of sugar
  • 1/8 tsp salt
  • ¼ cup semi-sweet chocolate chips, melted
  • 4 1/3 table spoons eggs, whole, beaten
  • ¼ cup cake flour
  • ¼ cup cocoa powder
  • ¼ tsp baking powder
  • A little more than a half cup milk
  • ¼ tsp vanilla extract

Directions:

  • Preheat oven to 350 degrees. Coat bottom of 10 inch round pan with non-stick pan spray; set aside
  • In a bowl, sift together cake flour, cocoa powder, and baking powder; set aside
  • In a separate bowl combine milk and vanilla extract; set aside
  • In a mixer fitted with a padel attachment, combine bitter, canola oil, sugar, and salt and mix on medium speed for 2 minutes
  • Scrape down sides of bowl and add melted chocolate. Mix on low speed until thoroughly mixed
  • Scrape down sides of the bowl, and on a low speed slowly add the eggs until combined
  • Add flour mixture in three parts, starting and ending with the dry ingredients, while alternating with wet ingredients
  • Pour batter into prepared 12” round pan and bake at 350 degrees for 11 to 14 minutes
  • Remove from oven, let cool completely
  • Once the brownie has been baked and cooled, layer on the brownie vanilla ice cream
  • Ice cream should be about an inch thick but should not cover the perimeter of the brownie
  • Hot Fudge  is then drizzled on the ice cream in a “zig zag” design
  • Chocolates, candies, jimmies are randomly placed on the ice cream so that each slice gets a proportionate share
  • Pizza is put in the freezer to harden
  • Slice after pizza is frozen and serve
