2 nori sheets/dried laver (“gim” in Korean)
Gimbap Rice:
- 2 1/2 – 3 cups steamed rice
- 2 tsp toasted sesame oil
- 1 tsp rice vinegar
- 1 tsp sugar or agave nectar
- 1/2 tsp salt
Filling:
- ~ 1/2 cup packed, kimchi sliced thinly
- 1 ripe avocado, cut into long thick slices
- 1 small cucumber, julienned
- sweet pea sprouts/shoots, washed and dried
Spicy Dipping Sauce:
- 2 TB cashew butter
- 2 tsp gochujang (Korean red chili pepper paste)*
- 1 tsp agave nectar or honey
- 2 tsp rice vinegar
