Yum Alert: Kimchi Avocado Roll with Spicy Dipping Sauce

This kimchi avocado roll was love at first sight. Combining sweet and spicy flavors, this Korean-inspired, vegan sushi recipe is both, satisfying and beneficial to your health; kimchi, which is fermented cabbage, supports your gut and digestion! Image and recipe via Chow Divine.


Serves 2

2 nori sheets/dried laver (“gim” in Korean)

Gimbap Rice:

  • 2 1/2 – 3 cups steamed rice
  • 2 tsp toasted sesame oil
  • 1 tsp rice vinegar
  • 1 tsp sugar or agave nectar
  • 1/2 tsp salt


  • ~ 1/2 cup packed, kimchi sliced thinly
  • 1 ripe avocado, cut into long thick slices
  • 1 small cucumber, julienned
  • sweet pea sprouts/shoots, washed and dried

Spicy Dipping Sauce:

  • 2 TB cashew butter
  • 2 tsp gochujang (Korean red chili pepper paste)*
  • 1 tsp agave nectar or honey
  • 2 tsp rice vinegar
