Ingredients:
1 lb finely grated, peeled, baked yukon gold potatoes
1/2 flour, plus another 1/2 cups for dusting
1 egg, whipped (optional)
1 tbsp matcha powder, plus 1 tbsp for dusting
pinch of salf (fine salt works best)
For the butter:
6 tbsps unsalted butter
1 tbsp finely grated ginger
1/2 orange, juiced
