Yum Alert: Mini Quiche Crave

Mini egg-y delight!


We all know better than to shy away from anything mini.  In quiche form, you’ll get a bite-sized morsel of healthy & flavorful grub with less calories, more cuteness & any kind of fillings you desire. YESSSS.

Ingredients:

  • 2 batches of pie crustdough (homemade or store bought)
  • 3 eggs
  • 3/4 cup heavy cream (or milk)
  • salt and pepper
  • your choice of fillings
  • Directions:

    1. Preheat oven to 375°F.
    2. Roll out the piecrust and cut in circles, using a round cookie cutter. Place cut out circles in the bottom of a buttered mini muffin pan or regular-sized muffin pan.
    3. Fill with any combination of filling (see suggestions below). Place the filling (about 1 tablespoon) so that it doesn’t go over the lip of the crust.
    4. In a mixing bowl, beat the eggs and the heavy cream. Add salt and pepper. Spoon the egg mixture over the filling, below the lip of the crust but covering the filling.
    5. Bake for 20-25 minutes.
    6. The quantity of filling needed will vary according to your taste. Sauté the vegetables in advance, so the kids can just go crazy when creating. Options include bell peppers, potatoes, spinach, onion, broccoli, mushrooms, bacon, ham, Swiss cheese, cheddar cheese, and feta cheese.
