I’m trying to OD on the pumpkin recipes so I won’t miss them too much once Thanksgiving is over. This coffee cake is an essentially part of any Thanksgiving morning breakfast. Coffee + pumpkin coffee cake + Macy’s Thanksgiving Day Parade = perfection. Recipe and image via Not So Humble Pie.
Ingredients:
1/2 cup butter, softened
1 1/2 cups sugar
15 oz can pumpkin
3 large eggs
2 1/2 cups flour
2 teaspoons baking powder
1 tablespoon cinnamon
1 1/2 teaspoons ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
Streusel Topping:
1/4 cup flour
1/4 cup sugar
1/4 cup light brown sugar, packed
1/2 teaspoon cinnamon
2 tablespoons butter, melted
1/3 cup walnuts, chopped
