The vegan lifestyle can be a costly one. Whenever I go to the store and want to buy vegan ice cream, I often find myself thinking, “What’s the biggest priority here: having vegan chocolate popsicles in my life or paying rent?” The decision is never as easy as it seems. Vegan ice cream is amazing. Here is a more cost effective way of having cool vegan treats on hand. (Btw, I’m not vegan, I just wish I was.) Recipe and image via Veggie-Wedgie.
Chocolate Pudding Ice Cream Base:
-4 ripe avocados
-1 cup raw cacao powder
-1 cup agave nectar
-1/2 cup water
White Chocolate Shell:
-150 grams raw shaved cacao butter
-4 tbsp raw coconut butter/oil
-6 tbsp coconut milk powder ( this is not a raw product, but you can substitute with lucuma, maca or yacon powder)
-6 tbsp agave nectar
-1/2 tsp ground vanilla powder
