These remind me of the overly processed, store-bought version of oatmeal pies that I was obsessed with when I was little. I’m pretty sure I could still be obsessed with them if they were homemade and had any involvement with salted caramel anything. Recipe and image via Caleigh’s Kitchen.
Ingredients for the cookies:
1 cup unsalted butter at room temperature
1/2 cup white sugar
1/2 cup dark brown sugar
1 egg
1/4 cup light corn syrup
1 ½ teaspoon vanilla extract
3 cups old fashioned rolled oats
1 ½ cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon table salt
1 package high quality semi-sweet chocolate chips
1/2 cup Vanilla sugar (or raw sugar works too)
Ingredients for the filling:
1/2 cup granulated sugar
4 tablespoons water
1/2 cup heavy cream
1 teaspoon vanilla extract
1 1/2 sticks butter, at room temperature
1/2 teaspoon fleur de sel or sea salt
1 cup powdered sugar
