Valentine Coconut Cookies

Valentine’s Day is a day replete with chocolate and emotional eating. The last thing you need is another calorie/sugar/preservative laden dessert. What you do need is a yummy, healthy, cute, pink treat. Recipe and image via Eat Good 4 Life.

Ingredients

1 cup unsweetened shredded coconut

 1/2 cup unrefined sugar

2 cups whole wheat pastry flour

1 1/2 stick of butter, room temperature, 3/4 cup

5-7 tablespoons low fat milk

1 teaspoon coconut extract, optional

A couple of drops of pink food coloring

Frosting

7 tablespoons confectioner’s sugar

3-4 tablespoons low fat milk
