Yum Alert: Vegan Pad Thai

Pad Thai is, quite possibly, one of the greatest things on Earth.

It isn’t however, a practical meal option for most of us. Traditionally made from rice noodles, bean sprouts, egg, vegetables, peanuts, and shrimp or chicken, Pad Thai is seen as a time-consuming, indulgent dish to make.

This recipe, though, which is 100% vegan, not only calls for less preparation time, but uses simple, wholesome ingredients without compromising the taste of Thai flavors. Recipe and image via One Ingredient Chef.

Ingredients:

For the Pad Thai:

Pad Thai rice noodles (8-10 oz.)
8-12 asparagus
2 carrots
1 red bell pepper
2 yellow summer squash
1 cup mung bean sprouts
2-3 green onions
8 oz tofu
1-2 tablespoons peanut oil
2-3 limes
1/3 cup cilantro
Crushed peanuts

For the Pad Thai Sauce:

1/4 cup vegetable stock
3 tablespoons tamari or soy sauce
3 tablespoons rice vinegar
3 tablespoons agave nectar
2 tablespoons tamarind paste
1+ teaspoon cayenne pepper
1 clove garlic, minced
1/2 sheet nori/seaweed (optional)
