DIY Funfetti Cake from Scratch

Ever wonder how to make funfetti cake from scratch? Of course you did.

My friend Emily over at TooDrunkTopangas alerted me that she mastered the art of DIY funfetti cake, and is walking her readers through the experience. And if the 20th century taught us anything, it’s that funfetti cake is an essential part of a decent human existence. So here’s what you’ll need to make yourself a full on funfetti cake fiesta:

For the funfetti cake:

1 cup (2 sticks) unsalted butter, at room temperature
1 1/2 cups sugar
4 large egg whites
2 tablespoons clear imitation vanilla (I used Wilton’s)
6 tablespoons vegetable oil
2 1/2 cups cake flour, like Swans Down
2 1/4 teaspoons baking powder
3/4 teaspoon salt
1 cup whole milk
2/3 cup plus 1 tablespoon sprinkles

1 cup sweetened coconut (optional)
