Focaccia art instructions:
- Proof your yeast (1.5 teaspoons of yeast, 1/2 teaspoon of sugar) in warm water. This should look like a frothy latte after around 15 minutes.
- Add 5 cups of 00 flous (this make a large focaccia)
- And a generous pinch of salt (the author uses Italian sea salt like this one)
- Add it to your mixer with a bit more water until it’s slightly sticky
- Turn the dough out onto a floured surface and hand-knead until you feel it getting elastic and soft (the author suggests this may take about 10 minutes)
- Allow the dough to rise, then cover it and pop it into the fridge for about 24 hours.
- Take it out, let it rise again.
- Put the dough into a large pan to keep rising a bit more and then get started with your art.
Consider thinly slicing bell peppers, onions, olives and vine-ripened tomatoes to create your focaccia art landscape. Adorn with basil, parsley and even rosemary sprigs.
