After you’ve recovered from our toffee apple bread pudding recipe, you may want an easy go-to that comes together in five minutes or less. This deliciously chewy and sweet Marshmallow Cornflake Candy Recipe is exactly that. And it’s so easy that kids can do most of it alone.

You’ll make this one on repeat. We’re not kidding, it takes just five minutes to make and can easily be vegetarian, vegan and dairy-free (though it’s unnecessary).

Ingredients

  • 1 whole bag or box of regular cornflakes (standard size, not the massive bags from Costco)
  • 1 whole large bag of marshmallows (I used the vegan kind to keep the entire recipe vegetarian and vegan-friendly)
  • 1/2 bag dark chocolate chips (I used these dairy-free chips to meet my family’s dietary needs)
  • 1/2 cup margarine or coconut oil

Instructions

  • In a large, shallow pan melt your margarine or coconut oil over low-medium heat.
  • When the oil is melted and a bit warm, go ahead and add the entire bag of marshmallows. Stir gently with a spatula or wooden spoon until the oil and marshmallows are combined to form a pan full of sticky fluff.
  • Remove the pan from the heat.
  • Fold in your cornflakes, stirring gently and incorporating every bit. Work somewhat quickly.
  • Transfer the entire thing to a 9 x 13 (or slightly larger) baking pan lined with parchment paper. Gently squish the cornflake marshmallow mixture into the corners so the entire thing is evenly distributed.
  • Quickly top with chocolate chips while the cornflake candy is still a bit warm.
  • Allow 10 minutes to cool, then slice into 16 even squares.

Notes

You can easily swap cornflakes for other breakfast cereals, and I like to use colorful marshmallows to give this a bright candy-like appearance. The cornflakes add more crunch than typical rice cereals might, so the experience of eating these is considerably different.

If you don’t have a large nonstick pan, use your favorite vintage cast iron skillet from your collection. Just make sure it’s seasoned properly so the marshmallow mixture doesn’t stick.
