Yum Alert: Roasted Delicata Squash Salad with Pomegranate and Goat Cheese

We all ate a lot during the holiday’s. It’s time to put the yummy desserts aside! Thankfully, this delicious squash salad will make eating our greens super easy. Image and recipe via Dinner Was Delicious.


  • 1 large Delicata Squash
  • 1 Pomegranate
  • 3 oz Goat Cheese
  • 3/4 cup Olive Oil for the Vinaigrette, plus some for seasoning the Squash
  • 1/4 cup Balsamic Vinegar
  • 1 tbsp Dijon Mustard
  • Salt and plenty of Black Pepper
  • 4-6 cups Arugula, or other greens of your choosing
  • 1/4 cup candied or roasted Walnuts (optional)
