This rich, sticky toffee apple bread pudding recipe is a decadent holiday treat you’ll make on repeat.

This may be the most decadent apple bread pudding recipe we’ve seen yet! It’s loaded with rich, caramelized toffee flavors and velvety cream on top of already-delish brioche. Serve it on its own, with a hot cup of tea poured from your favorite cast iron tea pot or with a chic chocolate chai martini.

The fresh apples and warm, creamy texture make this an ideal fall and winter entertaining dish you’ll come back to on repeat—guaranteed.

Ingredients

  • 3 buns St Pierre Brioche Burger Buns
  • 2 whole firm eating apples (such as Braeburn or a another robust variety)
  • 1 tbsp butter (reserve a bit more for greasing your pan)
  • 1 cup double cream
  • 1 whole large egg
  • 2 tbsp toffee sauce (we love this toffee syrup, it’s amazing in coffee too!)
  • 2 ounces chopped-up toffee candy (we used these Heath bars)
  • 2 ounces dates (chopped)
  • 1/2 tsp high-quality cinnamon

Directions

  • Preheat the oven to 325°F
  • Grease a small to medium-sized oven proof dish with butter and place on a baking tray
  • Peel, core and slice the apples
  • Melt 1 tbsp of butter in a small frying pan and saute the apples gently for five to seven minutes, or until they’re tender but not mushy
  • Add the cinnamon and cook for another minute
  • Spread half the apples over the base of the dish
  • Cut the burger buns vertically so that you have half-moon shapes and arrange the bottoms of the buns over top of the apples
  • Whisk the cream, egg and toffee sauce in a bowl, then carefully pour half of the cream mixture over the buns in the dish.
  • Scatter over half the chopped toffee and dates
  • Dip the top halves of the buns in the remaining toffee cream mixture then arrange in the dish
  • Loosely cover the dish with foil and cook in the oven on the baking tray for 20 minutes
  • Uncover and return to the oven for a further 10-20 minutes or until the top is golden and the cream mixture is just set
  • Serve warm
