1cupBreakstone's cottage cheese(splurge a little—go for full fat!)
2tbspmaple syrup
1 1/2tsppumpkin spice seasoning
1tspvanilla extract
1 1/4cupalmond flour
1/4cupvanilla protein powder
1/4cupsmall white chocolate chips
Instructions
Blend cottage cheese, maple syrup, pumpkin spice and vanilla extract together in a food processor or blender until smooth.
Transfer to a large mixing bowl.
Stir in remaining ingredients (try not to eat all the chocolate chips on their own).
Cool in the fridge for a few minutes to set, then store in a covered container for up to three days refrigerated.
Notes
We love this recipe because it's so easy to make and on the healthier side for junk food thanks to all the protein in cottage cheese and the added protein powder.Consider variations like skipping the pumpkin spice and adding a dash of almond extract and dark chocolate chips. Yum!
