Indian Spiced Roasted Chickpeas

Ingredients

  • 1 can chickpeas (standard 15.5-ounce size)
  • 2/3 cup chopped Bubbie's Bread & Butter Pickle Chips
  • 1 whole lemon, juiced
  • 1 tablespoon high quality garam masala powder (or to taste)
  • 1 tablespoon olive oil
  • 1 pinch salt and pepper (to taste)

Instructions

  • Preheat your oven to 375 degrees F
  • Drain and rinse chickpeas and pour them into a large baking dish or cast-iron skillet. (Make sure your chickpeas aren't crowded or they won't roast completely)
  • Combine your olive oil and garam masala seasoning. Drizzle over chickpeas and toss to coat.
  • Add a dash of salt and pepper
  • Roast for 10 min, then check your pan and toss the chickpeas
  • Roast for another 5 to ten min until desired crispness is achieved and the edges are golden brown
  • Remove from heat, squeeze fresh lemon over the top. Serve warm.
