Yum Alert: Aunt Becky’s Cookies

The most delicious oatmeal and flax chocolate chip cookies from my Aunt Becky

A few weeks ago I went to visit my sister best friend Cerise in Seattle. We were exhausted after a long day shopping around Portland, and had just done a workout video so in our minds we deserved dessert, but also wanted it to be on the healthier side. Her mom, my Aunt Becky whipped up the most amazing oatmeal flax chocolate chip cookies, and now you can have them to following these directions and using the ingredients below:

Ingredients:

2 large eggs
1 1/4 cups brown sugar
3/4 cup plain sugar
1 tbl. spoon vanilla

Blend all of the above

Add:
2 cups quick cooking oats
1/4 cup flax seeds or flour
(If you use seeds put in blender with oats, if you’re using flax flour you don’t ned to)
Put in blender to make it like flour
Mix into wet mixture
Sprinkle 1 teaspoon baking soda
Add up to a cup of flour depending on consistency
(*Not runny but can hold a ball shape once you plop it on the greased pan or baking pad on the tray)
 
Finally…add semi sweet chocolate chips.
 
Bake 375 degrees for about 7 minutes
