Cashews are my chosen ones when it comes to mixed nuts. I carefully select them out of the crowd like a model scout on the hunt on 5th Avenue. These blondies feature the cream of the cashew crop, along with a little dulce de leche for good measure. Recipe and image via The Capitol Baker.
Ingredients:
1/2 cup unsalted butter
1 cup dark brown sugar
1 egg
1/2 tsp salt
1 cup flour
1/2 cup Dulce de Leche (store-bought or homemade)
1 1/4 cups roasted salted cashews (halves and pieces)
