These are something that make me sit here at my computer, dumbfounded by the lack of serious concentration one would need to create these magical pops on a stick, and think… ‘why didn’t I think of this?!?!’ while my mouth waters all over my keyboard at the thought of running home tonight to try it. Roommates, you’re welcome in advance.
Directions:
- Kiwi – peeled and cut in 1 inch thick rounds, with a popsicle stick in each round. Freeze on a tray in the freezer.
- 1 cup Chopped dark chocolate and 1/2 cup Coconut oil – melted over a double boiler, then cooled to room temp
- Dip each Kiwi-pop into the chocolate mixture (it will immediately turn crispy) and place on a tray to refreeze or pass around right now.
Recipe founder, Cathy, also states that a serving of kiwi has enough fiber to replace an entire bowl of cereal, enough potassium to replace a banana & enough vitamin C, E & folate (hey to your pregnant ladies out there!) to make any human feel their healthiest. Covering it in chocolate doesn’t seem so bad now, ay?
