This gluten-free almond orange florentine recipe is too good for gluten. The combo of almond, orange, and bittersweet chocolate is everything. Plus, the ingredients are simple and they’re easy to make

Ingredients:

  • 1/4 cup olive oil for brushing and preventing stickiness
  • 2 whole egg whites at room temperature
  • 2 cups sliced almonds without skins (almond slivers may also work)
  • 3/4 confectioners sugar (you may need a spoonful or two more depending on the texture)
  • 1 whole orange’s zest

Instructions

  • Preheat your oven to 300°F and line a baking sheet with parchment paper. Brush it with a little olive oil (or spray) to ensure a stick-free baking experience.
  • Add the egg whites, confectioners’ sugar, sliced almonds and loads of orange zest in a bowl (all of it!). Mix until everything is fully combined. Don’t worry if some of the almond slices break a bit—that’s totally okay.
  • Run your hands under cool water and begin to scoop well-spaced batter mounds on your baking sheet. Make sure there are at leaat two inches between each cookie mound.
  • Using a fork, gently press each mound down to flatten. It may be a good idea to coat your fork in a little olive oil to avoid the batter sticking.
  • You should have about two trays of florentines. Each tray will need from 10 to 15 minutes in the oven, be sure to check frequently. Remove when golden brown.
  • Allow to cool. Store in an airtight container for up to a week.

Notes

  • You’ll need parchment paper and a good, high-quality baking sheet to get the recipe right. We love this one—you’ll use it for loads of other recipes, too.
  • Feel free to add subtle twists as you continue making the recipe down the road. We love it with an added 1/4 teaspoon of almond extract or vanilla extract to really turn up the flavor.
  • Consider serving these with fresh melon slices and hot bergamot tea for an authentic Mediterranean dessert experience.
