Gluten-Free Almond Orange Florentines

Ingredients

  • 1/4 cup olive oil for brushing and preventing stickiness
  • 2 whole egg whites at room temperature
  • 2 cups sliced almonds without skins
  • 3/4 cup confectioners sugar (you may need a spoonful or two more depending on the texture)
  • 1 whole orange zest

Instructions

  • Preheat your oven to 300°F and line a baking sheet with parchment paper. Brush it with a little olive oil (or spray) to ensure a stick-free baking experience.
  • Add the egg whites, confectioners' sugar, sliced almonds and loads of orange zest in a bowl. Mix together.
  • Run your hands under cool water and begin to scoop well-spaced batter mounds on your baking sheet. Make sure there are at leaat two inches between each cookie mound.
  • Using a fork, gently press each mound down to flatten. It may be a good idea to coat your fork in a little olive oil to avoid the batter sticking.
  • You should have about two trays of florentines. Each tray will need from 10 to 15 minutes in the oven, be sure to cehck frequently. Remove when golden brown.
  • Allow to cool. Store in an airtight container for up to a week.
