Ingredients
1/4cupolive oil for brushing and preventing stickiness
2wholeegg whites at room temperature
2cupssliced almonds without skins
3/4cupconfectioners sugar(you may need a spoonful or two more depending on the texture)
1wholeorange zest
Instructions
Preheat your oven to 300°F and line a baking sheet with parchment paper. Brush it with a little olive oil (or spray) to ensure a stick-free baking experience.
Add the egg whites, confectioners' sugar, sliced almonds and loads of orange zest in a bowl. Mix together.
Run your hands under cool water and begin to scoop well-spaced batter mounds on your baking sheet. Make sure there are at leaat two inches between each cookie mound.
Using a fork, gently press each mound down to flatten. It may be a good idea to coat your fork in a little olive oil to avoid the batter sticking.
You should have about two trays of florentines. Each tray will need from 10 to 15 minutes in the oven, be sure to cehck frequently. Remove when golden brown.
Allow to cool. Store in an airtight container for up to a week.
