If I could only eat Indian food for the rest of the year, I’d be extremely ok with it. I’m going through a very serious Indian food phase in my life right now, which explains this paratha recipe. If you like naan and buttery things, you’ll like this. Recipe and image via Just Homemade.

Ingredients:

1 small organic butternut squash
1-1/2 cups stone ground whole wheat flour or Atta + 1/4 cup more for dusting
1 tbsp kalonji / Nigella seeds (aka black caraway seeds or onion seeds)
salt to taste
oil for pan roasting
