Leave it to us to feature something like Kale Pop Tarts. It’s actually a great idea, though, because Pop Tarts exist in essentially every other flavor except kale. These are savory and delicious with garlic, cheese, and cauliflower puree. Recipe and image via Reclaiming Provincial.
Ingredients:
Dough:
2 cups of all-purpose flour
1/2 teaspoon salt
1 cup (2 sticks) of unsalted butter, cut into 1/2-inch cubes
1 large egg
2 tbsp milk
1 additional large egg (to brush on/seal the dough)
Filling:
3 large kale leaves, rinsed and roughly chopped
3 cloves of garlic, minced
1 tbsp olive oil
1/4 cup of cheese (I used half cheddar and half parmesan)
1/3–1/2 cup of cauliflower purée (recipe above)
salt and pepper, to taste
spoonful of spicy, whole grain mustard (optional)
