1 sweet potato (about 14 oz)
3 tablespoons olive oil
2 tablespoons of maple syrup
1 teaspoon of cumin
1 pinch of cinnamon (optional)
salt
pepper
70 fl oz of cream
1 tablespoon chopped chives
2 tablespoons of ricotta
