Healthy eating is important year-round… but it’s definitely much more enjoyable, to me, with the fresh fruit & veggies that come along with the summer months. Peep this deliciously refreshing salad, packed with nutrients and fiber, for a kid-friendly dinner option.
Blueberry & Apricot Super Salad
Serves 4
Salad
3 1/2 c. spinach
15 radishes
15 cherry tomatoes
10 apricots
3 small spring onions, cut into thin slices and marinated in apple vinegar and olive oil
1 can (15.5 oz) cannellini beans, rinsed
8 oz. blueberries
Rinse spinach and place on a towel to dry. Slice radishes, halve tomatoes and quarter apricots. Place all ingredients in a bowl; add blueberries. Serve with dressing.
Raspberry Mint Dressing
4 oz. raspberries (fresh or frozen)
1 tsp. honey
1 Tbsp. mint, chopped
pinch of sea salt
3 1/4 tsp. olive oil
Mash the raspberries with a fork and mix with honey, mint leaves and salt. Stir in the olive oil with a spoon.
