I feel as though zucchinis are under-appreciated, for sure. I mean, they aren’t the greatest, but they are the healthiest. Show them some love with zucchini pasta, and don’t worry, you’ll have some flavor backup with the addition of goat cheese. Goat cheese makes everything better, after all. -3 small zucchini
-1 cup pasta water
-1 cup goat cheese
-Kosher salt and black pepper to taste
