Gluten-Free Peach Brown Butter Buckle recipe

I’m salivating just looking at all of this peachy, brown sugar deliciousness. Not to add, that it is gluten-free which takes away an extra slice of guilt.

What is helpful about cooking with gluten is that it is good for elasticity and for crunchy crusts and air holes in a baguette. Also the summer peaches and plums (if you choose to include) are perfectly in season making for an incredible comforting summer dessert.

Ingredients:

  • 12 tablespoons unsalted butter
  • 4 cups thick-sliced ripe peaches (about 8 medium peaches)
  • 1 teaspoon fresh lemon juice
  • 1 1/2 cups sugar
  • 1 teaspoon ground cinnamon
  • 265 grams gluten-free all-purpose flour mix
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 large eggs, at room temperature
  • 2/3 cup whole milk (you can use non-dairy milk here)
  • 1/3 cup dark brown sugar
