I love exotic foods.  I love weird concoctions (seriously, and relationships count as concoctions), and even though it’s gonna sound nuts… I’m IN LOVE with this fun peach-basil cocktail that’s perfect for the end of summer!  Felicia’s Atomic Lounge in Ithaca, NY is the genius creator of this sweet and tangy cocktail that’ll make all your friends swoon.

And feel free to substitute other spirits if you’re not a bourbon kinda person:)

I love switchin’ it up with Sobieski vodka or Southern Comfort.  Enjoy, because peaches and fresh basil are healthy… so this is like doing your body a favor!

Peach-Basil Cocktail

1 1/2 ounces Woodford Reserve bourbon (or SoCo, or vodka!)
3 ounces peach-basil puree (see below)
splash of club soda
basil leaf

Shake bourbon and peach-basil puree with ice. Serve unstrained on the rocks with a splash of club soda. Garnish with a basil leaf.

Peach-Basil Puree

2 fresh ripe peaches (or try nectarines!)
8 fresh basil leaves, torn up
1/4 ounce lemon juice
1/2 ounce simple syrup (half sugar, half water)

Puree all ingredients in the blender.
