Vegan Chai Fig Bread Recipe

This sweet, aromatic bread is perfect on it's own or a total delight when served with hot tea and good company

Ingredients

  • 1 1/2 cups teff flour
  • 1 1/2 cups tapioca flour
  • 1 1/2 tsp baking soda
  • 3/4 tsp kosher salt
  • 1 cup brewed chai tea (cooled down)
  • 1/2 cup coconut oil
  • 1/2 cup cup evaporated cane juice (you can use brown sugar if you're in a pinch)
  • 1 1/2 tsp high-quality vanilla extract
  • 3/4 cup chopped black mission figs
  • 2 whole black mission figs cut in half lengthwise
  • 6 sprays coconut oil spray

Instructions

  • Preheat your oven to 325 degrees Fahrenheit
  • In a mixing bowl, combine all your dry ingredients (except your black mission figs, hold those to the side)
  • Then, mix in vanilla extract and coconut oil
  • When those are combined, fold in your evaporated cane juice (or brown sugar) and brewed chai tea
  • Work the batter gently till all the lumps are gone
  • Add chopped mission figs
  • Grease a glass baking dish with coconut oil spray (though we like lining ours with parchment paper first and then adding the spray as well—it makes cleanup way easier)
  • Pour contents into the baking dish, giving it a few seconds to settle and eliminate air pockets
  • Top with halved black mission figs
  • Spritz the top with just a bit more coconut oil spray so your figs caramelize nicely
  • Bake until lightly browned and batter is set all the way through (approx 25 minutes, but every oven is slightly different)
