Yum Alert: Loaded Vegan Baked Potato

  • 4 large russet potatoes
  • 1 can vegetarian chili
  • 1/2 cup – 1 cup vegetable broth (optional, but preferred)
  • 1 green onion, finely chopped
  • 1 cup of your favorite vegan shredded cheddar cheese
  • 1 cup vegan sour cream
  • Vegan Bacon Bits (optional)
