This Indian Spice Roasted Chickpeas recipe hits all the right flavor notes and it’s incredibly easy to make. We love all the satisfying vegan protein and rich flavor that hits savory, salty and sweet notes. Just a handful of these crunchy beans meets nearly half of your daily fiber requirements.
It’s also a fun way to introduce new flavors into your diet thanks to garam masala, a traditional Indian spice blend with cinnamon, mace, peppercorns, coriander seeds, cumin and cardamon. The added chopped-up pickle chips add texture, flavor depth and a hint of sweetness that balances the savory flavors.
Ingredients:
- 1 can chickpeas (standard 15.5-ounce size)
- 2/3 cup chopped Bubbie’s Bread & Butter Pickle Chips
- 1 whole lemon, juiced
- 1 tablespoon high-quality garam masala powder (or to taste)
- 1 tablespoon olive oil
- 1 pinch salt and pepper (to taste)
Directions:
- Preheat your oven to 375 degrees F
- Drain and rinse chickpeas and pour them into a large baking dish or cast-iron skillet. (Make sure your chickpeas aren’t crowded or they won’t roast completely)
- Combine your olive oil and garam masala seasoning. Drizzle over chickpeas and toss to coat.
- Add a dash of salt and pepper
- Roast for 10 min, then check your pan and toss the chickpeas
- Roast for another 5 to ten min until desired crispness is achieved and the edges are golden brown
- Remove from heat, squeeze fresh lemon over the top. Serve warm.
